I finally got around to making my own pesto and I couldn't be happier with the result! This stuff is delicious with eggs, on pasta (or zucchini pasta), topped on a burger, tossed with green beans - the options are endless!
MAKES APPROX. 1 CUP
1/2 cup extra virgin olive oil
1/2 cup macadamia nuts
2 - 2 1/2 cups of fresh cilantro (rinsed)
2 minced garlic cloves
Salt and pepper
- Combine all ingredients in a food processor and blend until smooth.
