Gluten-Free, Vegan Oatmeal Chip Cookies

Ingredients

  • 1 tbsp flax seed meal
  • 2 1/2 tbsp water
  • 1/2 cup coconut oil (not melted)
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla
  • 3/4 cup gluten-free flour blend (Namaste Foods)
  • 1 1/2 cup gluten-free quick oats
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup Enjoy Life Dark Chocolate Morsels

Directions

  1. Preheat oven to 350 degrees.
  2. In a small bowl combine flax seed meal and water. Stir to incorporate and set aside for at least 5 minutes until it reaches an egg-like consistency.
  3. While waiting, cover two baking sheets with parchment paper.
  4. Once the flax egg is ready, cream it together along with the coconut oil, sugars and vanilla in a large bowl using an electric mixer.
  5. Add dry ingredients and combine thoroughly. Stir in chocolate chips last.
  6. Drop by rounded spoonful onto parchment paper.
  7. Bake for 8-10 minutes. Allow them to cool completely before transferring.
