Ingredients
- 1 tbsp flax seed meal
- 2 1/2 tbsp water
- 1/2 cup coconut oil (not melted)
- 1/4 cup white sugar
- 1/2 cup brown sugar
- 1/2 tsp vanilla
- 3/4 cup gluten-free flour blend (Namaste Foods)
- 1 1/2 cup gluten-free quick oats
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup Enjoy Life Dark Chocolate Morsels
Directions
- Preheat oven to 350 degrees.
- In a small bowl combine flax seed meal and water. Stir to incorporate and set aside for at least 5 minutes until it reaches an egg-like consistency.
- While waiting, cover two baking sheets with parchment paper.
- Once the flax egg is ready, cream it together along with the coconut oil, sugars and vanilla in a large bowl using an electric mixer.
- Add dry ingredients and combine thoroughly. Stir in chocolate chips last.
- Drop by rounded spoonful onto parchment paper.
- Bake for 8-10 minutes. Allow them to cool completely before transferring.
