MAKES 1-2 SERVINGS

Ingredients
1/2 avocado
1 small-med tomato
1/4 cucumber
1 tbsp olive oil (almond oil also tastes fantastic)
Juice of 1/2 lime
1/2 tsp salt
1/2 tsp pepper
1 tsp dried cilantro or parsley leaves
6 tail-less jumbo cooked shrimp (optional)

Directions

  1. Chop the avocado, tomato, cucumber and shrimp into small, bite-size pieces and place into bowl.
  2. Top mixture with olive oil, lime juice, salt, pepper and herbs.
  3. Mix well and enjoy!

If you wish to make this recipe for more people, simply double, triple or quadruple the ingredients!

I also like a lot of salt, pepper and cilantro leaves, but I toned it down a bit for this recipe. Feel free to add more according to your taste buds!
