MAKES 1-2 SERVINGS
1 small-med tomato
1 tbsp olive oil (almond oil also tastes fantastic)
Juice of 1/2 lime
1/2 tsp salt
1/2 tsp pepper
1 tsp dried cilantro or parsley leaves
6 tail-less jumbo cooked shrimp (optional)
- Chop the avocado, tomato, cucumber and shrimp into small, bite-size pieces and place into bowl.
- Top mixture with olive oil, lime juice, salt, pepper and herbs.
- Mix well and enjoy!
If you wish to make this recipe for more people, simply double, triple or quadruple the ingredients!
I also like a lot of salt, pepper and cilantro leaves, but I toned it down a bit for this recipe. Feel free to add more according to your taste buds!
